This course introduces the principles and practices of organic crop production. It applies sustainability principles and ecological concepts to field-based exercises and hands-on practices in the production of edible and ornamental crops. Topics emphasized include selecting, starting, and maintaining crops, irrigation methods, organic weed and pest control strategies, harvesting, farm management, and crop marketing and sales. Students are required to attend in-person field trips.
